Pickled eggs & Beets

This is my first official Fresh Food Friday blog post!! 🥳 Here I will share recipes that help to optimize hair growth; with a focus on combating Iron deficiency, PCOS, and insulin resistance. These high protein, nutrient dense recipes will lessen the impact that these ailments have on your hair.
Ingredients:
- 10 Eggs
- 1 Medium beet
- Brine:
- 2C Vinegar
- 2C Water
- 2T salt
- 1T Sugar/Sugar substitute
- 4T Pickling spice
Directions:
Peel and chop your beets. Place your beets into a pot of water with your eggs and boil them until the beets are fork tender.
Heat your brine separately. Once your eggs and beets are done peel the eggs and place both the beets and eggs in the brine. Allow the mixture to cool. Transfer to the glass dish of your choice. Refrigerate and allow the brine to soak in for at least 24 hrs. Enjoy!
